Parsley Pesto with Quinoa  – By Leigh-Anne Frankllin RHN

We’ve started our detox program with Angel Hands Wellness  (I miss you coffee….). Okay so for a couple of weeks we’ll be foregoing some of our favorite comfort foods, but think of this as a time to discover new and maybe  healthier renditions of your favorite meals. For example, check out this parsley pasta that is absolutely delicious on quinoa pasta. By switching out white pasta that is devoid of nutrients with quinoa pasta, that is not only gluten-free, but high in protein, you’ve already made a significant nutritional boost to your meal… and don’t even get me started on the parsley which is a great detoxifier, and full or redeeming qualities… See? It really don’t need to be that painful 🙂

Ingredients

  • 2 c parsley
  • 3 cloves garlic
  • ½ c pumpkin seeds
  • ½ c olive oil
  • 3 T lemon juice
  • 1/4 of a purple onion
  • Pinch of cayenne
  • Salt & pepper to taste

Directions

  1. Throw everything in your food processor and blend until smooth.

Yes my fellow plan followers, those are red peppers you seen in the pasta, and no you can’t have them for the next 2 weeks (nightshades!). I took the pic last week… sorry to lead you on…
